There is a cut of pork called country style spare ribs, and it seems like you can get this all over. Recently, the Piazza's has been selling country style spare ribs cut in larger pieces than I am used to seeing. These are delightful!! I've been getting them on sale for $3/lb. These are nearly boneless pieces of meat. They are tender. You can just grill them or pan fry them. And they have a nice moderate amount of fat--more than boneless chops and less than butt.
I'm not sure why these become so much better when cut in large pieces. It might be because there is a little bit of bone in these, and when they are cut in a larger pieces it is easier to see the pattern of the bones and to remove them easily.
